Chicken Hash - Kari

Weird Name but VERY Tasty!!!

2 large baked potatoes, peeled and diced
2 cups shredded cooked chicken (I used 1/2 rotisserie)
3 medium carrots (8 oz), shredded
1/2 medium onion, shredded
1 jar (12 oz) chicken gravy
1/4 tsp each salt and pepper

1. Heat 1 Tbsp oil in large nonstick skillet over medium heat. Add all ingredients, stir to mix well, then press down with back of spatula.

2. Cook 8 to 10 minutes until a crust forms on bottom. Turn in sections with the spatula. Cook 5 minutes longer.

3. Flip onto serving plate or serve from skillet.
